Strozzapreti are a type of pasta characteristic of Italy, in particular of Romagna and the nearby Marche. It was born as a poor, home-made pasta that uses simple ingredients but requires a fair amount of manual workmanship. The dough rolled with a fairly thick rolling pin, is cut into strips about 1-1.5 cm wide. In turn the strips are cut to about 5 cm in length and worked manually one by one. This type of pasta requires well-seasoned sauces and elaborated meat sauces.
